Kidney bean is popular pulses because of its shape and taste whose genus is Phaseolus, belong to the family Fabaceae. It is often an excellent dietary source of protein and minerals with no cholesterol. White kidney beans (Phaseolus vulgaris) has Hypoglycaemic, anorexigenic, Antiradical and antioxidant activity. Molybdenum is naturally present in kidney beans which helps in producing energy by neutralizing toxic effects of sulphites. It also improves the proper functioning of fat, carbohydrates, copper, and nitrogen metabolism in body. Kidney bean is also a good source of folate which is important for the production of red blood cells and for the proper development of the brain and spine.
